“Restaurant” Ramen

We’re all familiar with microwave ramen, and that definitely has a special place in my heart. But there’s no arguing that the kind of ramen we get to enjoy at restaurants is supremely better. The obvious reason: It’s got a lot more going on! This one has bacon, mushrooms, leafy bok choy, eggs, plus tons of flavor thanks to a balance of sauces. Try it once and you might never go back to that cup of noodles again.

What You'll Need
Ingredients
- 2-3 slices smoked Canadian bacon
- Cooking oil, as needed
- 3-4 shiitake mushrooms, stemmed and thinly sliced
- 1-2 teaspoons soy sauce
- 4-5 leaves of baby bok choy, halved lengthwise.
- 1 package of ramen
- 1-2 steamed eggs (recipe to follow)
- 1/4 cup sliced green scallions, green part only
- Your favorite chili crisp sauce
For Steamed Eggs:
Add two cups of water into the Perfect Power Pot™ and toggle heat to Level 2 (high heat). Place the steamer insert with the glass lid on top of the pot. Once the water boils, place eggs in the round slots in the steamer insert, cover with the glass lid, and set the timer for desired doneness. When the timer goes off, remove the eggs and place them in a bowl of ice water for 2-3 minutes.
To remove the shell, crack the side of the egg and gently roll it with your hand to crack the shell all around. Remove the shell and rinse with water. Cut in half just before serving.

- 10 Minute Egg – Fully set with soft center yolk
- 12 Minute Egg – Fully set with hard center yolk
Directions
Step 1
Turn the Perfect Power Pot™ to Level 1 (low heat) and add in bacon slices. Cook bacon until lightly browned, about 2-3 minutes. Flip and brown on the other side.
Step 2
Remove bacon and set aside. Depending on how much fat renders out from the bacon, you may need to add some additional cooking oil to the pot to cook the mushrooms. Add enough cooking oil so there is about 1 to 2 tablespoons of the combination of fat and oil. Toggle heat to Level 2 (high heat) and add mushrooms. Cook, stirring occasionally, until browned, about 5 minutes. Stir in the soy sauce, and cook until it has thickened and coated the mushrooms. Remove mushrooms and set aside with the bacon.
Step 3
With heat still on Level 2, add in 2 cups of water. Place the steamer insert on top of the pot with the bok choy and cover with the glass lid. When water boils, uncover the pot and submerge the ramen noodles in the water, place the steamer insert and glass lid back on the pot, and cook noodles until tender, about 3 to 4 minutes.
Step 4
When noodles are cooked, stir ramen seasoning into the noodles. To serve, arrange the bacon, mushrooms, eggs, and bok choy around the noodles. Garnish with green onion and chili crisp sauce. Enjoy!
