While ceramic coatings are nonstick, using a small amount of high-smoke-point oil or butter enhances performance and extends coating life. High-quality ceramic nonstick pans require much less oil than traditional cookware. Just a light coating is sufficient for excellent food release. Make sure to avoid aerosol sprays.
