Green Chili Pork

What You'll Need

Ingredients

  • 4 pounds boneless pork shoulder, cut into 3-inch chunks
  • 1 white onion, peeled and quartered
  • 2 poblano peppers, halved with stem and seeds removed
  • 1 serrano pepper, halved with stem and seeds removed
  • 1 pound tomatillos, husks removed and halved
  • 1 cup cilantro leaves
  • 2 cloves garlic, peeled
  • 2 teaspoons ground cumin
  • Kosher salt
  • Freshly ground black pepper
  • Cooking oil

Directions

Step 1

Preheat your Wonder Oven to 425°F on Roast.

Step 2

Place onion, peppers, and tomatillos on the bake pan. Drizzle with oil, season with salt and pepper, and toss to coat. Place the bake pan in the Wonder Oven. Roast the veggies until slightly charred, about 20 minutes. 

Step 3

Remove the bake pan from the oven and pour all the veggies and juices into a blender. Add cilantro, garlic, and cumin to the blender and puree until smooth. 

Step 4

Add pork and pureed mixture to the Dream Cooker cooking pot, then mix together to coat the pork. Cook on High Pressure for 45 minutes. After cooking, let the pressure naturally release. The Steam Release Indicator will be on as pressure is releasing. The meat and pureed mixture can be used for multiple dishes. Our favorites are tacos and posole. 

For Tacos

  • Green Chili Pork Meat
  • Tortillas
  • Pico de gallo or your favorite taco sauce
  • Pickled red onions

Directions

Remove about half of the pork meat and place in a medium mixing bowl. Pour a ½ cup of the cooking liquid over the pork and mash it up. Season with salt and pepper. Serve with flour or corn tortillas and your favorite taco toppings. 

For Posole

6-8

  • Green Chili Pork Meat
  • 1 28-ounce can of hominy
  • 1 to 2 cups chicken stock

    Garnishes:
  • 4 radishes, thinly sliced
  • 1 bunch cilantro leaves
  • 1 bunch green onions, thinly sliced
  • 2 to 3 limes, quartered
  • 1 to 2 avocados, cut into chunks

Directions

Mash up the pork in the Dream Cooker bowl. Add in the hominy and bring to a simmer on Saute/Sear mode. If the mixture is too thick, add in some chicken stock to thin it out. Simmer for 10 minutes. Adjust the seasoning with salt and pepper. Serve in soup bowls with garnishes.
