Truffle Parmesan French Fries

These truffle Parmesan French fries elevate the classic side dish into gourmet territory. Crispy homemade French fries are tossed with aromatic truffle oil, fresh Parmesan, parsley, and bright lemon zest for an irresistible combination. All it takes is one potato, a little oil, and sea salt to make perfectly crispy French fries in the Wonder Oven Pro.

What You'll Need

  • 1 large russet potato (12–14 oz)

  • 2 teaspoons neutral oil

  • 2 teaspoons truffle oil, or to taste

  • 1 tablespoon grated Parmesan cheese, or more to taste

  • 1 tablespoon chopped parsley

  • Lemon zest, to taste

  • Sea salt, to taste

Directions

Step 1

Preheat the Wonder Oven Pro to 375°F/AIR FRY.

Step 2

Wash and cut the potato into ¼-inch-thick fries (skin on or off—your choice). Place the cut fries in a large heatproof bowl. Heat 2 quarts of water to 180°F (just below a boil), then pour over the fries to fully submerge. Let soak for 10 minutes to help fluff the interior and speed up cooking time.

Step 3

Drain the fries and transfer them to a paper towel–lined tray. Pat dry thoroughly to remove excess moisture.

Step 4

Toss the dried fries with neutral oil until evenly coated. Arrange them in a single layer on the air fryer basket, leaving space between each fry to promote crisping. Place the bake tray on the bottom rack to catch drips and insert the basket on the middle rack.

Step 5

Air fry for 14 minutes, or until the fries are golden brown and crispy. No need to flip—the circulating heat will do the work.

To finish, drizzle truffle oil into a large bowl. Add the hot fries and toss to coat. Sprinkle with grated Parmesan, parsley, lemon zest, and sea salt. Toss again until well seasoned. Serve immediately.
