Mediterranean Crunchwrap

Inspired by the classic fast-food favorite but packed with bold Mediterranean flavor, this crunch wrap is layered with spiced meat, fresh veggies, melty cheese, and a herby labneh-feta spread—all folded into a crispy, golden tortilla. It’s quick to assemble, deeply satisfying, and perfect for lunch, dinner, or meal prep.

What You'll Need

Ingredients

For the Meat

  • 1 lb ground chicken or beef
  • 1 batch homemade gyro seasoning (see below)

Gyro Seasoning

  • 1 tablespoon ground cumin
  • 1½ teaspoons ground coriander
  • 2 teaspoons garlic powder
  • 2 teaspoons paprika
  • 1 teaspoon turmeric
  • 1 teaspoon chili powder
  • ¼ teaspoon cinnamon
  • ⅛ teaspoon ground cloves
  • 1½ teaspoons salt
  • ½ teaspoon black pepper

For the Herbed Feta Labneh Spread

  • 1 cup labneh
  • 4 oz feta, crumbled
  • 1 teaspoon lemon zest
  • Juice of ½ lemon
  • 3 tablespoons chopped fresh dill
  • 3 tablespoons chopped fresh parsley
  • 1 garlic clove, grated or minced
  • Salt and pepper, to taste

For Assembly

  • Monterey Jack cheese, shredded
  • Shredded lettuce
  • Diced tomatoes
  • Diced cucumbers
  • Diced onions
  • 1 tostada (per wrap)
  • Large flour tortillas

Directions

Step 1

In the  Always Pan Pro  over medium heat, cook the ground meat with the gyro seasoning until browned and cooked through. Set aside.

Step 2

In a small bowl or  blender , combine labneh, feta, dill, parsley, lemon juice, lemon zest, garlic, salt, and pepper. Blend or mash until smooth and spreadable.

Step 3

Prep your veggies by dicing the tomatoes, cucumbers, and onions.

To assemble:

Lay a large flour tortilla flat. In the center, layer shredded Monterey Jack cheese, cooked ground meat, and a tostada. Spread a generous spoonful of labneh spread over the tostada, then top with diced veggies and shredded lettuce.

Step 5

Fold the edges of the tortilla inward to create a sealed wrap.

Step 6

Heat a  nonstick pan  or your  Cast Iron Always Pan  over medium heat. Place the wrap seam-side down and cook for 2 to 3 minutes per side, or until golden and crispy. Use a  Grill Press  to get an extra sear.

Step 7

Slice and serve with extra labneh dip on the side.
