What does ‘without Teflon’ mean?

Teflon is the brand name most commonly associated with PTFE, the material traditionally used to make cookware nonstick. PTFE belongs to the larger PFAS family, often called ‘forever chemicals’ because they break down very slowly.


Some home-cooks avoid PTFE because it can begin releasing fumes at very high temperatures. StatPearls puts that point at around 260°C (500°F). Most cooking on the hob stays below that temperature, but an empty pan left over high heat can exceed it.


Others simply prefer cookware made without PFAS in the first place. If that’s your priority, look beyond ‘PFOA-free’. PFOA is only one type of PFAS, while PTFE is another. If your priority is the smoothest, most familiar nonstick experience, choose ceramic. It’s especially good for delicate foods and the meals you cook most often, as long as you’re comfortable using low to medium heat and gentler utensils.


If your priority is durability and range, choose coating-free titanium. It gives you a nonstick effect without limiting your heat, tools or cleaning routine.

Are cast iron and carbon steel nonstick without Teflon?

Cast iron and carbon steel are both made without Teflon, but neither starts out nonstick. Their release improves as layers of seasoning build across the cooking surface.


Cast iron cookware holds heat exceptionally well, making it a natural choice for deep browning, frying and oven cooking. It’s heavy and needs to be dried and seasoned properly as it is otherwise easy to rust, but it can last for generations with the right care.


Carbon steel cookware works in much the same way. It’s lighter than cast iron and responds more quickly when you adjust the heat, but it needs the same ongoing care to avoid rust. Both are excellent options if you don’t mind maintaining the seasoning and don’t expect a perfectly slick surface on day one.

Is stainless steel nonstick without Teflon?

Stainless steel is Teflon-free, but it isn’t nonstick. Food releases when the pan is properly heated, oil is added at the right time and the food has browned enough to lift on its own.


That takes more technique than ceramic or titanium, especially with eggs and delicate fish. In return, stainless steel gives you excellent browning and the fond that becomes a deeply flavoured pan sauce. It’s a great pan material, but it isn’t the most direct substitute for traditional nonstick.
